The slow and renewed awareness changed in recent years towards products based on respect for nature, traditions and processing techniques has allowed companies like Calemone to finally be repaid for all the sacrifices made during the 30 years of hard work to bring on the tables a fresh, genuine, inimitable product.
The love and passion contained in each jar has reached unexpected heights albeit secretly dreamed of for some time. The exhausting search for perfection in every phase of production has done the rest: finally seeing the fruits of one’s work adorned with the precious Slow Food Presidium is a source of pride; even more so if there are two products, “Oro del Parco” extra virgin olive oil and “Fiaschetto tomato sauce”.
A source of pride for those who have always wanted to build their company following the principles of agro-ecology, respecting the landscapes and their biodiversity, avoiding the use of pesticides, antibiotics, preservatives, additives and dyes.
Calemone's challenge for an BIO production
Respect nature in all its forms: this is the challenge that the Calemone Agricultural Company wanted to take up many years ago, in an area stripped of productions that for centuries have characterized the Alto Salento area overlooking the Natural Reserve of Torre Guaceto.
A clean cut with higher yield crops, favoring what has always been the local tomato ecotype (the fiaschetto), has allowed Calemone to be recognized first, then assert itself as a synonym of authenticity, sustainability and quality.
